The problem we walked into.
Manual fat/SNF capture by hand at 280 collection centres, with daily aggregations done at district HQ on paper, then re-keyed at state HQ. Payout cycles took 12–14 days. Variance disputes between farmers and the cooperative were the leading source of attrition.
How we attacked it.

Hardware-aware design: offline-first Android app for each collection centre, syncs whenever connectivity returns. Native integration with Milkotron + Lactoscan testers.
